Tender Pot Roast

12 in. Dutch Oven
 
2 lb. Roast
1 onion, sliced
4 potatoes
1 clove garlic, minced
seasoned meat tenderizer
Juice from 1 lemon
baby carrots
1 bell pepper, sliced
1 tsp. thyme
2 cups. tomato juice

we added: mushrooms and jalapeno too

Place roast in Dutch Oven and sprinkle with lemon juice and meat tenderizer. Poke with fork and sprinkle on thyme, garlic, and pepper. Arrange potatoes, onions, carrots, mushroom, and jalapeno around the roast and top with the bell pepper. Pour tomato juice over the vegetables and around the meat and cook until the meat is tender. (Around 4 hours.) 6 on bottom, 18 on top

The Review

The roast was very tender. It kind of has a tangy taste which is different but really good. Our family really enjoyed this. The recipe gets an A

BBQ Chicken


Chicken
BBQ sauce

place chicken in dutch oven pour bbq sauce over and cook for 1 hour. We use 12-in dutch oven so you use 8 coals on bottom, 16 on top. We like Famous Dave's BBQ sauce the best!!!

Best Dutch Oven Potatoes



This were the best potatoes!!! We loved them!!!

6 slice of thick-cut bacon
1 onion, diced
12 potatoes, peeled and sliced in 1/4- in thick rounds (we didn't peel ours)
1 can (4 oz.) diced green chiles
1/2 c. water
salt and pepper, to taste
2 c. grated cheddar cheese

Cook bacon in preheated Dutch oven, over 8-10 coals, remove from heat and crumble. Add onion to the bacon grease and cook until translucent. Put bacon back in the oven and add the potatoes, chiles, and water; season with the salt and pepper.

Cover and bake, using 9-10 coals on bottom 18 on top for 25 mins. Remove lid and turn potatoes over, do not stir. Add more water if needed. Cook 20-25 mins. more. Remove from heat and take coals from lid. Put cheese on potatoes and replace lid for 5 mins. to melt cheese.

BBQ Beans



1 pd. bacon
4 cans (15 oz. each) Busch baked beans
1 green bell pepper, chopped
1 onion, chopped
1 pack (16 oz.) lit'l smokies
hot sauce, to taste

Cook bacon until crisp using 12-in. dutch oven over 10-12 coals. Remove from oven, drain, and crumble. Add baked beans to the dutch oven, cover and bring to a boil (takes about 10 min.), use 9 coals underneath the oven and 14 on top. Add bell pepper, onion, lit'l smokies, hot sauce, and bacon; continue simmering until vegetables are cooked, 10-15 mins.

We didn't add the hot sauce we wanted everyone to add their own.

BBQ Chicken


10 pounds boneless, skinless chicken breasts
1 c. vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1/2 pound bacon, cooked and crumbled
1 can (12 oz) coke
1 bottle (12 oz) catsup
1 1/2 c. brown sugar

In 14-in. dutch oven, brown chicken in oil over 12 coals. Drain off oil. Add the onion and bell pepper and sprinkle the bacon over the top. In a large bowl, combine coke, cutsup, and brown sugar, pour over chicken. cover and bake, using 11 coals underneath the oven and 14 coals on top, for approximately 40 minutes.

Cheesy Potatoes


I will add a picture next time we make them. I forgot to take one!!

6-8 potatoes, sliced 1 onion, chopped fine
1 can cream of mushroom soup 1 can milk
2 cups cheddar cheese, shredded fresh ground pepper

Layer the potatoes in bottom of a 10" dutch oven. Mix onions with potatoes. Mix soup and milk together and pour over the potatoes. Pepper well. Cover with cheese and bake at 350 for about 1 hour or until tender.

Dutch oven beef enchiladas

We like cooking in the dutch oven whenever we can. This is beef enchiladas . I meant to take the picture before we dished up but Bryce was starving. I decided I wanted to blog the dutch oven meals we make to give other people ideas and maybe you guys can share what you like to make in the dutch oven too. We are always looking for new ideas to cook!!!

Beef Enchiladas
1 lb. hamburger
1 small onion
corn tortillas
enchilada sauce
cheese

  • Brown hamburger and onion. Mix in 1 garlic clove. I sprinkled cumin, chili powder, salt, and pepper in the hamburger.
  • Heat some oil-cook your corn tortillas for 10 sec. each side. I drained them on a paper towel.
  • In 12" dutch oven pour half of your enchilada sauce on bottom.
  • In each tortilla put in hamburger and cheese then roll. Continue til your dutch oven is full. Pour rest of enchilada sauce on plus more cheese.
  • 18 coals on top 6 on bottom. Cook for 30-40 mins. Rotate lid on way and the dutch oven the opposite.
  • You can serve with sour cream, lettuce, tomatoes, beans, rice and etc.
These turned out yummy!!!
