Dutch oven beef enchiladas

We like cooking in the dutch oven whenever we can. This is beef enchiladas . I meant to take the picture before we dished up but Bryce was starving. I decided I wanted to blog the dutch oven meals we make to give other people ideas and maybe you guys can share what you like to make in the dutch oven too. We are always looking for new ideas to cook!!!

Beef Enchiladas
1 lb. hamburger
1 small onion
corn tortillas
enchilada sauce
cheese

  • Brown hamburger and onion. Mix in 1 garlic clove. I sprinkled cumin, chili powder, salt, and pepper in the hamburger.
  • Heat some oil-cook your corn tortillas for 10 sec. each side. I drained them on a paper towel.
  • In 12" dutch oven pour half of your enchilada sauce on bottom.
  • In each tortilla put in hamburger and cheese then roll. Continue til your dutch oven is full. Pour rest of enchilada sauce on plus more cheese.
  • 18 coals on top 6 on bottom. Cook for 30-40 mins. Rotate lid on way and the dutch oven the opposite.
  • You can serve with sour cream, lettuce, tomatoes, beans, rice and etc.
These turned out yummy!!!

Dutch Oven Beef Stew



2 lbs. stew meat 1 clove garlic, minced
1 small bay leaf 2 onions, finely chopped
3 cups water 1 tsp. Worcestershire sauce
2 tsp. water 1/2 tsp. pepper
2 tsp. salt 3 medium potatoes, cut up
6 carrots, quartered (we use baby carrots)
1 beef bullion cube

1/2 cup flour
1 cup water

Combine all ingredients in a dutch oven except 1 c. water and four. Cover and cook for several hours until meat is cooked through and tender. Stir when needed.

Mix flour and water, stir into the stew, until it thickens to taste.

We have made this stew three times now. We really have enjoyed it each time.

Baked Beans


We halved the recipe and we still had tons left over. Bryce really like the baked beans. He kept saying that the beans could be eaten without having anything else with them. We had steaks with them. I didn't care for them I like my moms. They are really meaty. The beans were like a chili.

Vera's Baked Beans

1 lb. lean ground beef 1/2 cup catsup
1/2 lb. bacon 16 oz. Homestyle® Chili Sauce
1 large yellow onion; diced 2 Tbs. prepared mustard
1 small green pepper; diced 1/2 lb. pre-cooked ham; cubed
1/2 cup brown sugar (2) 31 oz. cans pork and beans

Heat a 12" Dutch oven using 18-20 briquettes bottom until oven is hot. Add ground beef and cook until brown. Remove browned beef and drain grease.

Cut bacon into 1 inch slices and place in oven and fry until brown. Add onions and green pepper and saute until onions are translucent. Drain off excess fat. Reduce briquettes on bottom to 12-14. Add browned beef, brown sugar, catsup, chili sauce, and mustard. Simmer for 15 minutes. Add ham and beans. Cover and add approximately 15 briquettes to the lid. Simmer for 2 hours stirring every 15 minutes.

Swiss Steak Dinner

1/4 c. Flour 1 tsp. salt
1/2 tsp. pepper 1 1/2 lbs. round steak, cut into pieces
1 Tbsp. Oil 1-28 oz can diced tomatoes with juices
2 Tbsp. water 1 small can green chilies
1 onion, sliced 5 carrots, cut into chunks
5 potatoes, cubed
2 Tbsp. cornstarch

Roll meat in flour, salt and pepper. Brown in Dutch Oven with oil. Add tomatoes and onions. Cover meat with chilies and bring to a boil. replace lid and bake 30 min. Add potatoes and carrots. Cover again and cook for 1 to 1 1/2 hours or until done to taste. Combine cornstarch and water. Stir into juices until thickened to taste.

We really didn't care for this meal. We think it is because we enjoy the beef stew so much. But it was worth trying.
